酒蔵の話

酔鯨酒造の創業は1872年(明治5年)。前身の石野酒造として高知市長浜で酒づくりを始めて以来、高知市内では唯一の蔵として酒を醸し続けてきました。

「酔鯨」という名は、幕末の土佐藩第15代藩主・山内容堂が自ら名乗った雅号「鯨海酔侯(げいかいすいこう)」に由来します。大の酒好きで知られた容堂が、鯨が豪快に水を飲み干すように酒を楽しんだ姿になぞらえた名で、「お客様にも鯨のように気持ちよく飲み干してほしい」という想いが、今の蔵にも受け継がれています。

掲げるのは「Enjoy SAKE Life」というテーマ。香りは穏やかに、キレを保ちながらも旨味はしっかりと。土佐の豊かな食文化に寄り添う「食中酒」としての酒質を追求し、2018年には吟醸酒に特化した土佐蔵を新設。長浜蔵と合わせた2蔵体制で、出荷量を伸ばしています。

土地の話

高知県は太平洋に面し、黒潮の恵みを大きく受ける土地です。海の幸、山の幸、川の幸に恵まれ、大皿に料理を盛り合わせて大勢で囲む「皿鉢(さわち)料理」に象徴されるように、豪快に飲み、豪快に食べる気質が根づいています。

土佐の酒が総じて「淡麗辛口」であるのは、この宴席文化と無縁ではありません。次から次へと杯を重ねても飲み飽きしないよう、キレのある酒質が磨かれてきました。温暖な気候と、山々から流れ込む清らかな水源が、その酒質を静かに支えています。

音楽の話

「南国土佐を後にして」の原曲は、太平洋戦争中に高知出身の兵士で編成された「鯨部隊」(旧日本陸軍第40師団歩兵第236連隊)が、遠い戦地で故郷を偲んで歌った歌にさかのぼります。戦後、作曲家・武政英策がこれを補作編曲し、集団就職などで土佐を離れる若者たちの心情を重ねた歌詞に仕立て直しました。

1959年、ペギー葉山の歌でキングレコードから発売されると、発売からおよそ1年で約100万枚を売る大ヒットとなり、累計200万枚を記録しました。歌詞には「よさこい節」のフレーズや、はりまや橋、桂浜といった高知の名所が織り込まれ、離れてなお故郷を想う気持ちがまっすぐに歌われています。

なぜこの組み合わせなのか

この曲の原型を生んだのが「鯨部隊」、そしてこの酒の名の由来が「鯨海酔侯」。狙ったわけでもなく、歌にも酒にも”鯨”が息づいているのが、このペアリングの面白いところです。

望郷の想いを胸に歌われた歌と、鯨のように豪快に飲むことを愛した藩主の名を継ぐ酒。どちらも「離れていてもなお、土佐を想う」という一本の線でつながっています。杯を傾けるたび、遠い戦地で歌われた望郷の調べが、静かに重なるようです。

The Story of the Brewery

Suigei Shuzo was founded in 1872 (Meiji 5). Its predecessor, Ishino Shuzo, began brewing sake in the Nagahama district of Kochi City, and the brewery has kept the tradition alive ever since as the only sake brewery still operating within Kochi City itself.

The name “Suigei” (literally “drunken whale”) traces back to the pen name that Yamauchi Yodo, the 15th and final lord of the Tosa domain in the closing years of the shogunate, gave himself: “Geikai Suikou,” or “the drunken lord of the whale sea.” Yodo was famously fond of drink, and the name likens the way he savored sake to a whale gulping down great draughts of seawater — a wish, carried into the present day, that guests too might drink as heartily and joyfully as a whale.

The brewery’s guiding theme is “Enjoy SAKE Life.” Its sake aims for a gentle aroma, a crisp finish, and a solid depth of umami — a style built to accompany food, in step with Tosa’s rich culinary culture. In 2018 the brewery opened a second facility, the Tosa Kura, dedicated entirely to ginjo-grade sake, and with the original Nagahama Kura now operating alongside it, production has continued to grow.

The Story of the Land

Kochi Prefecture faces the Pacific Ocean and is richly blessed by the Kuroshio Current. Abundant in seafood, mountain harvests, and river delicacies, the region has a deep-rooted spirit of hearty eating and hearty drinking — embodied in “sawachi ryori,” the local tradition of piling generous spreads of food onto large communal platters for everyone to share.

The fact that Tosa sake is, almost without exception, light and dry owes much to this culture of lively banqueting. Sake here has been refined toward a crisp, clean profile precisely so that drinkers never tire of it, cup after cup after cup. The region’s mild climate and the pure water flowing down from its mountains quietly support that character.

The Story of the Song

The origins of “Nangoku Tosa wo Ato ni Shite” trace back to the Pacific War, when soldiers from Kochi serving in the “Whale Corps” (the 236th Infantry Regiment of the former Imperial Japanese Army’s 40th Division) sang it on distant battlefields to remember their home. After the war, composer Takemasa Eisaku reworked and rearranged the song, giving it new lyrics that captured the feelings of young people leaving Tosa behind for group employment in the cities.

Released by King Records in 1959 with Peggy Hayama on vocals, the song became a massive hit, selling roughly one million copies within about a year and around two million copies in total. The lyrics weave in a phrase from the folk song “Yosakoi Bushi” along with famous Kochi landmarks such as Harimaya Bridge and Katsurahama Beach, expressing with striking directness the ache of missing home even from far away.

Why This Pairing

The song traces its roots to the “Whale Corps,” and the sake takes its name from “the drunken lord of the whale sea.” Neither connection was planned, yet a whale swims quietly through both the song and the sake — which is what makes this pairing such a delightful find.

A song sung with a heart full of homesickness, and a sake that carries forward the name of a lord who loved to drink as heartily as a whale — both are joined by the same thread: a longing for Tosa that persists even from afar.
