岩手県のベアレン クラシック

ベアレン醸造所は2001年2月20日、有限会社ベアレン醸造所として盛岡市に設立されました。代表取締役社長は嶌田洋一氏。社名の「ベアレン」はドイツ語で「熊(複数形)」を意味し、熊が生息する岩手の自然と、がっちりした体躯の醸造職人のイメージから名付けられたといいます。

醸造所の最大の特徴は、ドイツの醸造所で100年以上前から使われていた銅製の仕込み釜を移設し、今もそのままビール造りに使っていることです。建物自体もレンガや瓦を製造していた古い工場を改装したもので、ドイツ人ブラウマイスター(醸造職人)が仕込みに携わり、麦芽はドイツの麦芽メーカー、カール・ビンデバルト社から直接仕入れています。

フラッグシップの「クラシック」は、1900年代に盛んに輸出されていた当時のドルトムンダーのレシピを踏まえて造られたラガーで、アルコール度数6.0%、IBU23。ベアレン醸造所によれば、ドルトムンダーは19世紀ヨーロッパの「4大ラガービール」の一つに数えられ、輸送中も品質を保てるようホップと麦芽を通常より多く使う、濃厚な輸出用ビールとして発展したスタイルです。当時のドルトムントは石炭と炭鉱の街で、各地から集まってきた労働者階級に人気を博したと伝えられています。2015年4月2日には、日本ビアジャーナリスト協会が日本外国特派員協会(FCCJ)で開いた投票会「世界に伝えたい日本のクラフトビール」で、全国200以上の醸造所から選ばれた8醸造所の一角として出品。静岡・ベアードビールの「駿河湾インペリアルIPA」と77票の同数で最高得票となりました。

音楽の話

「緑の町に舞い降りて -ODE OF MORIOKA-」は、1979年12月1日に東芝EMIから発売された松任谷由実の8作目のオリジナルアルバム『悲しいほどお天気』に収録された一曲です。作詞・作曲は松任谷由実、編曲は松任谷正隆、演奏時間は4分41秒。英題が示す通り、盛岡への小旅行を題材にした紀行曲です。

松任谷由実は1954年、東京都八王子市生まれ。1972年に荒井由実名義でデビューしました。盛岡に縁が深い出身というわけではありませんが、この曲は発表から40年以上を経た今も盛岡で歌い継がれています。盛岡公演では欠かせない一曲とされ、地元の音楽の授業で取り上げられたこともあり、1996年開局の岩手朝日テレビのニュース番組オープニングにも使われました。2009年3月からは、いわて花巻空港のイメージソングとして館内で流れています。

なぜこの組み合わせなのか

どちらも、よそから来たものが、この町に降り立って根を下ろした話です。ベアレン醸造所の仕込み釜は、ドイツで100年以上働いたのち海を渡り、盛岡の古い工場の中で今もビールを仕込み続けています。クラシックのもとになったドルトムンダーというスタイル自体、各地から集まった労働者たちのために発展した輸出用ビールでした。よそから来たものを迎え入れる土壌が、この一杯の背景には流れています。

「緑の町に舞い降りて」もまた、東京生まれの作り手が盛岡へふらりと降り立ち、その緑に心を動かされて生まれた一曲です。旅人が残していった一篇の歌が、40年以上たった今も盛岡の人々に愛され、飛行機の到着ロビーで町を訪れる人を迎えています。降り立った先で根を下ろしたビールと、降り立った先を歌に残していった曲。どちらも、外から来たものをそのまま迎え入れてきたこの町の懐の深さを映しています。

🌡️ おすすめの飲み方(温度とグラス):6〜8℃、通常のピルスナーよりやや低めの温度で。ドルトムンダーは麦芽の甘みとホップの苦みがしっかりしたスタイルなので、細身のグラスや背の高いマグに注ぐと、きめ細かな泡が長持ちして味の輪郭がぼやけません。

  • クラフトビール:小規模な醸造所が、造り手の個性を前面に出して仕込むビールの総称。大量生産の均一な味とは別の方向を目指しています。
  • ラガー:低温で、酵母が下に沈みながら働く「下面発酵」で造るビール。すっきりと澄んだ切れ味になり、日本の大手ビールの多くがこの系統です。
  • モルト:発芽させた大麦(麦芽)のこと。ビールの甘み・色・コクの土台になり、焙煎の深さで色と香ばしさが決まります。

The Story of the Brewery

Baeren Classic from Iwate
Baeren Brewery was established in Morioka on February 20, 2001, as a limited company. Its president is Yoichi Shimada. The name “Baeren” is German for “bears” (plural), chosen, the brewery says, to evoke both the bears that still live in Iwate’s mountains and the sturdy build of its brewers.

The brewery’s defining feature is a copper mash kettle relocated from a German brewery, over a hundred years old, still used to brew beer today. The building itself is a converted former brick-and-tile factory. A German brewmaster is involved in the brewing, and the malt is bought directly from the German maltster Karl Bindewald.

Its flagship, Classic, is a lager brewed after the export-style Dortmunder recipes of the 1900s, at 6.0% ABV and IBU 23. According to the brewery, Dortmunder was one of the “four great lager styles” of 19th-century Europe, brewed heavier on hops and malt than usual so it could survive the journey to export markets. Dortmund itself was a coal and mining town at the time, and the beer was said to be popular among the working-class laborers who had gathered there from many different places. On April 2, 2015, at a tasting event hosted by the Japan Beer Journalists Association at the Foreign Correspondents’ Club of Japan (FCCJ), Classic was one of eight finalists chosen from over 200 breweries nationwide, tying for the top vote count — 77 votes — with Shizuoka’s Baird Beer and its Suruga Bay Imperial IPA.

The Story of the Song

“Midori no Machi ni Maiorite -ODE OF MORIOKA-” appears on Yumi Matsutoya’s eighth original album, “Kanashii Hodo Otenki,” released by Toshiba EMI on December 1, 1979. Written and composed by Matsutoya herself, arranged by Masataka Matsutoya, and running 4 minutes 41 seconds, it’s a travel song built around a short trip to Morioka — as its English title makes clear.

Matsutoya was born in 1954 in Hachioji, Tokyo, and debuted in 1972 under the name Yumi Arai. She has no deep roots in Morioka. And yet, more than four decades after its release, the song is still sung there: it’s considered essential at her Morioka concerts, has been used in local school music classes, and became the opening theme for Iwate Asahi TV’s news program when the station launched in 1996. Since March 2009, it has played inside Hanamaki Airport as the airport’s image song.

Why This Pairing

Both are stories of something from elsewhere landing in this town and taking root. The kettle at Baeren Brewery worked in Germany for over a hundred years before crossing the sea, and it’s still brewing beer inside an old factory in Morioka today. The Dortmunder style itself, the ancestor of Classic’s recipe, was an export beer that grew up serving laborers who had gathered there from many places. A soil that welcomes what arrives from elsewhere runs through this beer’s whole history.

“Ode of Morioka” is the same kind of story: a songwriter born in Tokyo touched down briefly in Morioka, was moved by its greenery, and wrote a song about it. More than forty years later, that traveler’s song is still loved by the people of Morioka, greeting visitors as they arrive at the airport. One is a beer that landed somewhere and took root; the other is a song that landed somewhere and stayed behind. Both reflect the same thing: a town generous enough to take in whatever arrives from outside, exactly as it is.

🌡️ How to serve it:6–8°C, a touch cooler than a typical Pilsner. Dortmunder is a style built on firm malt sweetness and hop bitterness, so pour it into a slim glass or a tall mug — the fine head holds longer and keeps the flavor from blurring.

    A Morioka specialty said to have been created at “Shokudoen,” open since 1954, blending the Hamhung- and Pyongyang-style cold noodles of the Korean peninsula. The firm noodles and cold, kimchi-spiked broth pair well with Classic’s firm carbonation and dry finish.
  • Iwate Tankaku Wagyu steak
    A branded beef from Nihon Tankaku cattle, of which Iwate is by far Japan’s largest producer. Low in fat and rich in lean-meat umami, it stands up well to Classic’s malt richness and hop bitterness, matching the beef’s firm bite.

A note on the science: the amino-acid umami in lean red meat layers with the malt-derived sweetness of the beer, producing an umami synergy. Carbonation’s pressure then resets the palate, compensating for the meat’s low fat content and keeping the next bite tasting just as good.

A Quick Glossary of Beer Terms

  • Craft beer: Beer made by small breweries that put the character of the maker front and centre, as opposed to the uniformity of mass production.
  • Lager: Beer brewed by bottom fermentation, with the yeast working at low temperature and settling toward the bottom of the tank. It tends toward a clean, crisp finish, and most major Japanese beers belong to this family.
  • Malt: Germinated barley. It forms the foundation of a beer’s sweetness, colour and body; how deeply it is roasted determines colour and toastiness.
  • ABV: Alcohol By Volume. Beer typically runs around 5%; above 8% is considered a strong, heavier-drinking beer.
  • IBU: International Bitterness Units, a scale for how bitter a beer tastes. Around 10 is barely noticeable bitterness; above 60 lands in clearly bitter IPA territory.
