酒蔵の話

北海道の郷宝

箱館醸蔵は2020年12月設立、2021年2月に醸造を開始した、道南エリアにとって実に35年ぶりとなる新しい酒蔵です(蔵元としては84年ぶり)。かつて道南で地酒を醸す蔵は姿を消して久しく、その空白を埋めたのが、七飯町で100年近く続く酒屋を営んできた冨原節子さんでした。「道南エリアに地酒を醸す蔵がないのは寂しい」という思いから酒蔵開業を決意し、岡山県の酒蔵から経営権と免許の譲渡を受けて実現にこぎつけました。

醸造を任されたのは、帯広畜産大学卒業後、北の誉酒造・札幌酒精工業・国稀酒造などで30年以上にわたり酒造りに携わってきた杜氏・東谷浩樹さん。全国新酒鑑評会では通算3度の金賞を受賞してきたベテランです。仕込み水には横津岳(標高1166.9m)の伏流水を、原料米には地元七飯町産の「吟風」「彗星」「きたしずく」を用い、「郷の宝で醸す」という決意を込めて代表銘柄「郷宝(ごっほう)」と名付けました。

今回合わせる「特別純米 壱火 磨き五割五分」は、北海道産の契約栽培米「きたしずく」を精米歩合55%まで磨いて醸した一本。アルコール度数15%、軽快な味わいのなかに酒米らしいやわらかな旨みが広がり、飲み飽きしない後口のキレが持ち味です。

土地の話

七飯町は函館市の北に隣接し、大沼国定公園を抱える道南の町。横津岳をはじめとする山々からの豊かな伏流水と、寒暖差のある内陸性の気候が、米づくり・酒づくりを支えてきました。すぐ南には、かつて北前船の寄港地として栄え、多くの人と物が行き交った港町・函館が広がります。

その函館を含む道南エリアから、いつしか地酒を醸す蔵の火が消えていました。35年という歳月は、ひとつの世代がまるごと入れ替わるほどの長さです。箱館醸蔵の誕生は、途絶えていた「地の酒」という文化が、ようやくこの土地に帰ってきた出来事でもあります。

音楽の話

「函館の女」は1965年11月10日発売、北島三郎のシングル。作詞は星野哲郎、作曲は島津伸男です。北島三郎を代表する持ち歌のひとつであり、以降に続く“函館もの“シリーズの原点となった一曲でもあります。

歌われるのは、意地を張って別れてきたはずの女を忘れられず、居ても立ってもいられずに函館へと舞い戻ってくる男の姿。港町の夜霧や灯りを背景に、未練と再会への願いが交錯する情景が描かれています。今も函館山のふもとには歌碑が建てられ、観光客が訪れる名所のひとつになっています。

なぜこの組み合わせなのか

「函館の女」の主人公は、一度は離れた場所から、忘れられずにこの港町へと戻ってきます。箱館醸蔵の物語もまた、35年間途絶えていた地酒造りが、この土地にもう一度舞い戻ってきたという「帰郷」の物語です。銘柄名「郷宝」に込められた“郷の宝”という思いは、歌の主人公が女のもとへ帰ろうとする一途さと、どこか重なって見えます。

横津岳の水で醸された淡麗でキレのよい酒質は、派手な演出のない北島三郎の低く落ち着いた歌声と、港町特有のしっとりとした空気感を思わせます。長い空白を経てなお、まっすぐに帰ってきたもの同士のペアリングです。

The Story of the Brewery

Hakodate Jozo brewery and Gohhou sake

Hakodate Jozo was founded in December 2020 and began brewing in February 2021 — the first new sake brewery to appear in the Donan region (southern Hokkaido) in thirty-five years (and the first new brewery owner in eighty-four years). Local sake breweries had long since vanished from Donan, and it was Setsuko Tomihara, who had run a sake shop in Nanae-cho for nearly a century, who stepped in to fill that gap. Moved by the thought that “it’s a shame Donan has no brewery producing local sake,” she decided to open one, acquiring the management rights and license from a brewery in Okayama Prefecture to make it happen.

Brewing was entrusted to toji (master brewer) Hiroki Higashiya, a graduate of Obihiro University of Agriculture and Veterinary Medicine who spent over thirty years honing his craft at breweries including Kitanohomare Shuzo, Sapporo Shusei Kogyo, and Kunikoi Shuzo. A veteran with three gold medals from the National New Sake Awards to his name, he draws his brewing water from the springs of Mt. Yokotsu (elevation 1,166.9m) and uses locally grown Nanae-cho rice varieties — Ginpu, Suisei, and Kitashizuku. He named the brewery’s flagship label “Gohhou,” meaning “brewed with the treasure of one’s home region,” to capture that resolve.

The tokubetsu junmai we’re pairing today is brewed from Kitashizuku, a sake rice grown under contract in Hokkaido, polished down to a seimai buai of 55%. At 15% alcohol, it’s known for a crisp, clean finish and a soft aroma, and it was selected for Hokkaido’s “Hokkaido High-Grade Foods 2023” list.

The Story of the Land

Nanae-cho borders Hakodate City to the north and is home to Onuma Quasi-National Park — a Donan town shaped by abundant springs flowing from mountains like Mt. Yokotsu and an inland climate with sharp seasonal temperature swings, conditions that have long supported rice and sake production here. Just to the south lies Hakodate itself, a port town that once thrived as a stopover for the kitamae-bune trading ships that carried people and goods along Japan’s coast.

Yet at some point, the flame of local sake brewing went out across the entire Donan region, Hakodate included. Thirty-five years is roughly the span of an entire generation. The birth of Hakodate Jozo marks the return of a “local sake” culture that had long been absent from this land.

The Story of the Song

“Hakodate no Onna” was released on November 10, 1965, as a single by Kitajima Saburo, with lyrics by Tetsuro Hoshino and music by Nobuo Shimazu. It stands as one of Kitajima Saburo’s signature songs and the song that launched the “Hakodate” series that would follow.

The song tells of a man who cannot forget the woman he stubbornly walked away from, and who, unable to stay away any longer, returns to Hakodate. Against a backdrop of harbor fog and lights, it weaves together lingering attachment and the hope of reunion. A song monument still stands at the foot of Mt. Hakodate today, drawing visitors as one of the city’s landmarks.

Why This Pairing

The protagonist of “Hakodate no Onna” once left this port town, only to return, unable to forget what he left behind. Hakodate Jozo’s own story is likewise one of homecoming — a local sake tradition, absent for thirty-five years, finding its way back to this land once more. The devotion held in the brand name “Gohhou,” meaning “the treasure of one’s home,” echoes the single-minded determination of the song’s protagonist returning to the woman he loves.

The clean, crisp character of a sake brewed with the waters of Mt. Yokotsu recalls Kitajima Saburo’s low, unadorned voice and the quiet, damp atmosphere unique to a harbor town. It’s a pairing of two things that, after a long absence, have found their way straight back home.

A note on the science: the glutamic acid and inosinic acid-rich umami compounds in squid and kelp overlap with the rice-derived amino acids in junmai sake, creating an “umami synergy” that lengthens and deepens the lingering finish on the palate.
