醸造所の話

神奈川県の湘南ビール ピルスナー

熊澤酒造の創業は明治5年(1872年)。もともとは日本酒の蔵で、いまも「湘南に残された最後の蔵元」を名乗っています。その蔵が廃業寸前まで追い込まれていたところに、六代目として戻ってきたのが熊澤茂吉さんでした。1993年、24歳のことです。当時の蔵の主力は大量生産の安価な酒で、「地元の安酒」というレッテルを貼られていました。

立て直しに取りかかった茂吉さんの前に立ちはだかったのは、時間の問題でした。日本酒を根本から作り変えるには何年もかかる。その間、蔵はどうやって食いつなぐのか。しかも日本酒造りは冬の仕事で、夏のあいだ蔵は静まり返ってしまう。そこで選ばれたのが、当時まだ耳慣れない言葉だった「クラフトビール」でした。ドイツから醸造家を招き、試行錯誤の末に1996年、湘南ビールが世に出ます。神奈川県のクラフトビールとしては、最も早い時期に立ち上がった一つでした。

今回の一本「ピルスナー」は、その湘南ビールの中で最も売れている定番です。ピルスナーモルトを100%使い、ホップはチェコ産のザーツと、ニュージーランド産のものをバランスよく配合。アルコール5.0%、苦みの数値はIBU24。数字だけ見れば穏やかですが、飲むとホップの香りがきちんと立ちます。そして湘南ビールは無ろ過・非加熱、つまり酵母が生きたまま瓶に入っています。だから賞味期間は冷蔵で120日と短い。日持ちを捨ててでも、搾りたてに近い味を届けるという選択です。

土地の話

茅ヶ崎と聞けば、多くの人が海を思い浮かべます。けれど熊澤酒造があるのは、海岸から少し内陸に入った香川という地区です。相模線の小さな駅が最寄りで、周りには畑と住宅がゆるやかに混ざり合っている。波音は聞こえません。ここは「湘南」という言葉が持つきらびやかなイメージの、ひとつ手前の場所です。

ただ、その「手前」こそが、この土地の本当の顔なのかもしれません。海に出るには、まずこういう場所を通り抜けなければならない。国道や県道を南へ下り、家並みが途切れ、ふいに視界が開けて水平線が出てくる。湘南で暮らすというのは、毎日その道を行き来することでもあります。

敷地には、古い酒蔵と古民家を生かしたレストランやカフェ、ショップが並んでいます。仕込みの音がする場所と、人が集まって飲む場所が、同じ敷地の中に地続きで存在している。造ったものを、造った場所で飲んでもらう。廃業寸前だった蔵が選んだのは、そういう開き方でした。

音楽の話

「希望の轍」は1990年9月1日、アルバム『稲村ジェーン』の一曲として世に出ました。作詞・作曲は桑田佳祐、編曲は小林武史と桑田佳祐。桑田佳祐自身が監督した同名映画の挿入歌で、シングルとして切られた曲ではありません。それでも、サザンオールスターズの代表曲の一つとして歌い継がれてきました。

イントロのピアノが降りてきて、リズムが走り出す。歌が始まる前から、もう車が動き出しているような曲です。桑田佳祐は茅ヶ崎の出身で、この曲が描いているのは、まさに彼が育った土地の空気でした。

2014年10月1日、この曲はJR茅ケ崎駅の東海道線ホームの発車メロディになりました。地元でどの曲がふさわしいかを問うアンケートに約1万人が答え、その一位が「希望の轍」だったといいます。いまも茅ヶ崎駅では、電車が出るたびにあのイントロが鳴ります。街の人にとっては、日常の合図です。

なぜこの組み合わせなのか

どちらも、「海に着く前」の話をしています。「希望の轍」は目的地に着いた歌ではなく、走っている途中の歌です。そして熊澤酒造も、海の見える場所ではなく、海へ向かう道の途中に建っています。輝いている一点ではなく、そこへ至るまでの時間のほうを引き受けているという点で、この二つはよく似ています。

味の面でも噛み合います。IBU24という控えめな苦みと、ピルスナーモルト100%の素直な麦の甘み。強く自己主張してこないぶん、何杯でも進んでしまうビールです。「希望の轍」もまた、聴き手を圧倒するタイプの曲ではありません。走り続けるリズムと、開けていくメロディ。どちらも、その場に長くいたくなる方向に働きます。

そしてもう一つ。この醸造所は、日本酒の蔵が生き延びるために始めたビール造りから生まれました。夏のあいだ止まってしまう蔵を動かし続けるための一杯だったのです。守りたいものがあるから、走り方を変えた。「希望の轍」という言葉が指しているのも、たぶんそういう種類の前進です。

🌡️ おすすめの飲み方(温度とグラス):6〜8℃、冷やしすぎないのがこのビールの正解です。キンキンに冷やすとホップの香りが閉じてしまいます。グラスは細めのタンブラーかピルスナーグラスで、泡を2〜3cm立てて。無ろ過なので瓶底に酵母が沈んでいます。最初は静かに注いで澄んだ一杯を味わい、最後のひと注ぎで瓶を軽く回して残りを落とすと、一本で二つの表情が楽しめます。

  • 湘南しらすの釜揚げ
    茅ヶ崎から腰越にかけての名物。塩気とほのかな苦みを持つしらすは、ピルスナーの穏やかな苦みとぶつからず、麦の甘みのほうを前に押し出してくれます。生姜とレモンを少し添えると、ホップの柑橘っぽい香りとつながります。
  • 鶏の唐揚げ
    醸造所自身が勧めている組み合わせです。揚げ物の油を、ホップの苦みと炭酸が一緒に流していく。次のひと口が、いつも一口目と同じ状態で始まります。

科学的にひとこと:ホップの苦み成分であるイソα酸と炭酸のガス圧は、揚げ物が口の中に残す油の膜を洗い流し、味覚をリセットします。またナトリウム(塩味)には苦味の感じ方を抑える働きがあることが知られており、しらすの塩気はピルスナーの苦みを和らげて、隠れていたモルトの甘みを浮かび上がらせます。

ひとことメモ(ビールの用語)

  • クラフトビール:小規模な醸造所が、造り手の個性を前面に出して仕込むビールの総称。大量生産の均一な味とは別の方向を目指しています。
  • ピルスナー:チェコのピルゼン生まれの淡色ラガー。澄んだ黄金色とホップの上品な苦みが持ち味で、世界で最も飲まれているスタイルです。
  • モルト:発芽させた大麦(麦芽)のこと。ビールの甘み・色・コクの土台になり、焙煎の深さで色と香ばしさが決まります。

The Story of the Brewery

Shonan Beer Pilsner from Kanagawa
Kumazawa Brewing was founded in 1872 as a sake brewery, and still calls itself “the last brewery left in Shonan.” By the early 1990s it was close to shutting down. Shigekichi Kumazawa returned as the sixth-generation owner in 1993, at the age of twenty-four. At that point the brewery’s main output was cheap, mass-produced sake, and it carried a reputation as the local budget label.

Rebuilding the sake would take years. The question was how the brewery would survive in the meantime — and what it would do during the summer, since sake brewing is winter work. The answer was a phrase that was still unfamiliar in Japan at the time: craft beer. Kumazawa brought in a German brewer, and after a good deal of trial and error, Shonan Beer launched in 1996, among the very first craft beers in Kanagawa Prefecture.

The Pilsner featured here is Shonan Beer’s best seller. It is built on 100% pilsner malt, with Czech Saaz hops balanced against New Zealand varieties, at 5.0% ABV and 24 IBU. Those numbers read as gentle, but the hop aroma is clearly there. And because Shonan Beer is unfiltered and unpasteurized, live yeast goes into the bottle — which is why it keeps for only 120 days refrigerated. Shelf life was traded away for freshness.

The Story of the Land

Say “Chigasaki” and most people picture the beach. But Kumazawa Brewing sits inland, in a district called Kagawa, served by a small station on the Sagami Line, surrounded by a loose mix of fields and houses. You cannot hear the waves here. This is the place just short of the glamour that the word “Shonan” carries.

That “just short of” may be the truer face of this area. To reach the sea, you have to pass through somewhere like this first — south along the highway, the rows of houses thinning out, and then the view suddenly opening onto the horizon. Living in Shonan means driving that road, back and forth, every day.

On the brewery grounds, restaurants, a café and a shop occupy the old brewing halls and farmhouses. The place where the beer is made and the place where people gather to drink it share the same ground. A brewery that came within sight of closing chose to open itself up in exactly that way.

The Story of the Song

“Kibo no Wadachi” — roughly, “the rut of hope” — was released on September 1, 1990, as a track on the album Inamura Jane. Kuwata Keisuke wrote both words and music; the arrangement is credited to Kobayashi Takeshi and Kuwata. It was an insert song for the film of the same name, which Kuwata himself directed, and it was never released as a single. Even so, it has been sung as one of Southern All Stars’ signature songs ever since.

The piano intro comes down, the rhythm takes off, and the car is already moving before the vocal starts. Kuwata Keisuke grew up in Chigasaki, and what the song captures is the air of the town he came from.

On October 1, 2014, the song became the departure melody on the Tokaido Line platform at JR Chigasaki Station. When locals were surveyed on which song belonged there, roughly ten thousand people answered, and this one came first. That intro still plays every time a train pulls out — an everyday signal for the people of the town.

Why This Pairing

Both are about the stretch before you reach the sea. “Kibo no Wadachi” is not a song about arriving; it is a song about still driving. And Kumazawa Brewing stands not where the ocean is visible, but partway along the road toward it. Both take on the time it takes to get somewhere, rather than the shining point at the end.

The flavors agree, too. A restrained 24 IBU of bitterness, and the plain sweetness of all-pilsner malt. Because it never insists on itself, the glass keeps emptying. “Kibo no Wadachi” is not a song that overwhelms you either. A rhythm that keeps running, a melody that keeps opening. Both make you want to stay where you are a while longer.

And one more thing. This beer exists because a sake brewery needed a way to survive — something to keep the brewhouse moving through the summer months when sake sleeps. There was something worth protecting, so the way of moving forward changed. That, most likely, is the kind of forward motion the song’s title points at.

Pairing Dishes Worth Trying

Shonan Beer Pilsner served with local dishes

  • Kamaage shirasu (steamed whitebait) from Shonan
    A specialty of the coast from Chigasaki to Koshigoe. The salt and faint bitterness of the whitebait never collide with the pilsner’s gentle bitterness; instead they push the malt sweetness forward. A little ginger and lemon links up with the citrus edge of the hops.
  • Karaage (Japanese fried chicken)
    The brewery’s own recommended pairing. Hop bitterness and carbonation wash the frying oil away together, so every bite starts in the same condition as the first.

A note on the science: the iso-alpha acids that carry hop bitterness, together with the pressure of carbonation, strip away the film of oil that fried food leaves in the mouth, resetting the palate. Sodium is also known to suppress the perception of bitterness, so the salt in the whitebait softens the pilsner’s bitter edge and lets the hidden malt sweetness surface.

A Quick Glossary of Beer Terms

  • Craft beer: Beer made by small breweries that put the character of the maker front and centre, as opposed to the uniformity of mass production.
  • Pilsner: A pale lager born in Pilsen, Czechia, known for its clear golden colour and refined hop bitterness. The most widely drunk style in the world.
