醸造所の話

埼玉県のコエド 伽羅

株式会社協同商事は1982年5月、埼玉県川越市で「安全・安心でおいしい食」を掲げる有機農業の会社として設立されました。1994年の酒税法改正で小規模醸造が解禁されたのを受け、1996年4月に発泡酒製造免許を取得してコエドブルワリーを開設。2006年には、川越の別名「小江戸」にちなんで、クラフトビールのブランド名を「COEDO」としました。醸造工場は2016年、より環境に配慮した施設として隣接する三芳町へ移転しましたが、本社は今も創業の地・川越市に置かれています。COEDOブランドの生みの親である朝霧重治さんも、埼玉県川越市の生まれです。

今回選んだ「伽羅-Kyara-」は、インディア・ペール・ラガー(IPL)というスタイルで、アルコール分5.5%・IBU35。原材料は麦芽とホップだけというシンプルな一本です。名前は、香木「伽羅」を思わせる深い赤褐色から取られました。カラメルモルトの甘みとコクに、ソーヴィニヨン・ブランやストーンフルーツ、トロピカルフルーツを思わせるホップの香りが重なります。

土地の話

川越は江戸時代、川越藩の城下町として栄え、江戸と舟運で結ばれた物資の集散地でした。「江戸に負けない町」という誇りから「小江戸」と呼ばれるようになり、今も蔵造りの町並みが「一番街」に残っています。COEDOというブランド名は、この愛称をローマ字にしただけの、ごくシンプルな命名です。生まれた土地の呼び名を、そのままブランドの名前として背負っている一本と言えます。

音楽の話

ACIDMANは1997年、西武学園文理高校の軽音楽部で出会った大木伸夫・椎橋武史・佐藤雅俊・浦山一悟の4人で活動を始めたロックバンドです。ボーカル・ギターの大木伸夫さんは1977年8月3日、埼玉県川越市の生まれ。高校卒業まで多くの時間を川越で過ごし、現在は東京に住みながらも、2、3ヶ月に一度は実家へ帰るのだといいます。

今回選んだ「赤橙(せきとう)」は、2000年11月24日にインディーズシングルとして発売され、2002年10月9日にはメジャー3rdシングルとして再度発売。同年10月30日のメジャーデビューアルバム『創』にも収録されました。作詞は大木伸夫さん、メジャー版の作曲はACIDMAN名義です。朝焼けや夕焼けを思わせる情景が、はっきりした物語の筋を持たないまま次々と重なっていく、色彩感の強い詞になっています。

2026年3月24日、大木さんは出身地・川越市の「小江戸川越大使」に就任しました。「現在は東京に住んでいますが、川越は僕にとって一番大切な場所です」というコメントを寄せ、これまでも地元でのワンマン公演や、自身が主催するロックフェス「SAI」での川越物産展、そして今回取り上げたCOEDOとのコラボレーションビールなど、故郷との結びつきを重ねてきました。

なぜこの組み合わせなのか

COEDOという名前は、川越の愛称「小江戸」からもらったものです。ACIDMANの大木伸夫さんもまた、生まれ故郷である川越から「小江戸川越大使」という肩書をもらいました。片や会社の名前として、片や個人の肩書として、どちらもこの街から名前を分けてもらっている点がよく似ています。

色の符合も見逃せません。伽羅色と呼ばれる深い赤褐色のビールと、「赤橙」という朝焼け・夕焼けを思わせる曲名。どちらも、燃えるような暖色を軸にしています。東京に暮らしながらも数ヶ月おきに川越へ帰るという大木さんの生活と、蔵造りの町並みに今も息づく「小江戸」という古い呼び名を、あえてブランド名に選んだCOEDOの姿勢は、どちらも「帰る場所」を大切に抱え続けているという点で通じ合っています。

🌡️ おすすめの飲み方(温度とグラス):キンキンに冷やしすぎず8〜10℃くらいで。グラスは口の広いチューリップ型やワイングラスにすると、伽羅色の見た目とホップの華やかな香りがよく開きます。

    タレの焦げた香ばしさとカラメルモルトの甘みが響き合い、ホップの苦味と炭酸が脂をすっきり洗い流してくれます。

    燻香とビールのモルト由来の香ばしさが重なり合い、白ワインを思わせるホップアロマがチーズのコクに軽さを添えます。

科学的にひとこと:炭火焼きや燻製で生じる香ばしい香り成分と、モルトを焙煎して作るカラメル香には共通する香りの系統があり、合わせると香りの輪郭がくっきりします。そこにホップ由来の苦味成分と炭酸のガス圧が加わることで、脂や燻香で重くなった舌をリセットし、次のひと口をまた新鮮に感じさせてくれます。

    小江戸川越のシンボルとされる鐘つき堂。江戸時代初頭、当時の川越藩主・酒井忠勝によって創建されたと伝わり、蔵造りの町並みが続く「一番街」の中心に立っています。現在も1日4回、鐘の音が響きます。
  • 菓子屋横丁/川越市|醸造所から車で約10分・約2km
    石畳の路地に約30軒の菓子屋が軒を連ねる通り。江戸時代に集まった菓子職人がのれん分けで店を広げたのが始まりで、大正末期から昭和初期にかけては東京の下町に代わる菓子の一大産地として栄えました。2001年には環境省の「かおり風景100選」に選ばれています。

ひとことメモ(ビールの用語)

  • クラフトビール:小規模な醸造所が、造り手の個性を前面に出して仕込むビールの総称。大量生産の均一な味とは別の方向を目指しています。
  • ラガー:低温で、酵母が下に沈みながら働く「下面発酵」で造るビール。すっきりと澄んだ切れ味になり、日本の大手ビールの多くがこの系統です。
  • IPA:インディア・ペールエールの略。ホップを大量に使い、強い苦みと華やかな柑橘や松のような香りを持たせたペールエールです。
  • ホップ:ビールに苦みと香りを与えるつる性植物の毬花(まりばな)。品種によって、柑橘・トロピカルフルーツ・草原のように香りが変わります。
  • モルト:発芽させた大麦(麦芽)のこと。ビールの甘み・色・コクの土台になり、焙煎の深さで色と香ばしさが決まります。
  • IBU:苦みの強さを表す国際的な数値。10前後だとほとんど苦みを感じず、60を超えるとはっきり苦いIPAの領域です。

The Story of the Brewery

COEDO Kyara from Saitama
Kyodo Shoji Co., Ltd. was founded in May 1982 in Kawagoe City, Saitama, as an organic farming company built around the idea of food that is “safe, secure, and delicious.” After a 1994 revision to Japan’s liquor tax law opened the door to small-scale brewing, the company obtained a happoshu manufacturing license in April 1996 and opened COEDO Brewery. In 2006, it named its craft beer brand “COEDO,” after Kawagoe’s nickname “Koedo” (Little Edo). The brewing plant relocated in 2016 to a more environmentally sustainable facility in the neighboring town of Miyoshi, but the company’s head office remains in Kawagoe, where it all began. Shigeharu Asagiri, the founder of the COEDO brand, was likewise born in Kawagoe City, Saitama.

Kyara, the beer featured here, is an India Pale Lager at 5.5% ABV and IBU 35. Its ingredient list is simple: just malt and hops. The name comes from the deep reddish-brown color reminiscent of kyara, a prized agarwood incense. Caramel malt sweetness and body meet hop aromas suggestive of Sauvignon Blanc, stone fruit, and tropical fruit.

The Story of the Land

In the Edo period, Kawagoe flourished as the castle town of Kawagoe Domain, linked to Edo by river trade. Proud of standing shoulder to shoulder with the capital, it came to be called “Koedo” — Little Edo — and its old storehouse-style streetscape still stands along Ichibangai today. The brand name COEDO is nothing more than that nickname, spelled out in Roman letters: a beer that carries the name of the place it was born, unchanged.

The Story of the Song

ACIDMAN is a rock band that started in 1997, formed by four members — Nobuo Oki, Takeshi Shiibashi, Masatoshi Sato, and Ichigo Urayama — who met in the light music club at Seibu Gakuen Bunri High School. Vocalist and guitarist Nobuo Oki was born on August 3, 1977, in Kawagoe City, Saitama. He spent much of his life there through high school, and while he now lives in Tokyo, he says he still returns to his family home every two or three months.

“Sekitou” (“Red-Orange”), the song featured here, was first released as an indie single on November 24, 2000, then re-released as ACIDMAN’s 3rd major-label single on October 9, 2002. It also appears on their major-label debut album Sou, released later that same month. Oki wrote the lyrics, and the major-label version is credited to ACIDMAN for the music. The lyrics layer scenes reminiscent of sunrise and sunset one after another, strongly colored but without a clear narrative thread tying them together.

On March 24, 2026, Oki was appointed a “Koedo Kawagoe Ambassador” for his hometown. “I live in Tokyo now, but Kawagoe is the most important place in the world to me,” he said in his comment. Over the years he has held a solo concert in Kawagoe, run a Kawagoe products fair at his own festival “SAI,” and — as featured in this article — collaborated with COEDO on a beer, each time renewing his ties to his hometown.

Why This Pairing

The name COEDO was borrowed from Kawagoe’s nickname, “Koedo.” ACIDMAN’s Nobuo Oki, too, was given a title — “Koedo Kawagoe Ambassador” — by the very town where he was born. One is a company name, the other a personal title, but both are names lent to them by this town.

The color lines up too. A beer the color of kyara — a deep reddish-brown — paired with a song titled “Red-Orange,” evoking sunrise and sunset. Both are built around a burning warm color. Oki’s life, split between Tokyo and a hometown he returns to every few months, and COEDO’s choice to wear the old name “Koedo,” still alive in the town’s storehouse streets, as its brand name — both come down to holding on to a place to come home to.

🌡️ How to serve it:Not too cold — around 8–10°C. Use a wide-mouthed tulip glass or a wine glass, so the kyara color and the beer’s bright hop aroma can fully open up.

    The toasty char of the glaze echoes the caramel malt sweetness, while the hop bitterness and carbonation cut cleanly through the fat.
  • Smoked cheese
    The smoky aroma meets the toasty malt character head-on, and the wine-like hop aroma lightens the richness of the cheese.

A note on the science: the aroma compounds produced by charcoal grilling or smoking share a chemical family with the caramel notes created by roasting malt, so pairing them sharpens the aroma on the palate. The hop bitterness and carbonation then reset a palate weighed down by fat or smoke, keeping the next bite tasting fresh.

  • Toki no Kane (Bell Tower) / Kawagoe City | ~10 min, ~2 km by car from the brewery
    The bell tower regarded as the symbol of Koedo Kawagoe. Said to have first been built in the early Edo period by Sakai Tadakatsu, then lord of Kawagoe Domain, it stands at the heart of Ichibangai, the street lined with old storehouse-style buildings. The bell still rings four times a day.
  • Kashiya Yokocho (Candy Alley) / Kawagoe City | ~10 min, ~2 km by car from the brewery
    A cobblestone lane lined with around 30 traditional sweet shops. It began when confectioners gathered here in the Edo period and multiplied through branch shops; from the late 1920s through the early Showa era it grew into a major sweets-making district filling in for those lost in Tokyo’s shitamachi after the 1923 earthquake. In 2001 Japan’s Ministry of the Environment named its scent one of the “100 Fragrant Landscapes of Japan.”

A Quick Glossary of Beer Terms

  • Craft beer: Beer made by small breweries that put the character of the maker front and centre, as opposed to the uniformity of mass production.
  • Lager: Beer brewed by “bottom fermentation” at low temperatures, with the yeast working near the bottom of the tank. It tends to finish clean and crisp; most major Japanese beers are lagers.
  • IPA: Short for India Pale Ale. A pale ale brewed with a heavy dose of hops for strong bitterness and bright citrus or pine aromas.
  • Hops: The cones of a climbing plant, which give beer its bitterness and aroma. Depending on the variety, that aroma can read as citrus, tropical fruit or open grassland.
  • Malt: Germinated barley. It forms the foundation of a beer’s sweetness, colour and body; how deeply it is roasted determines colour and toastiness.
  • IBU: An international scale for bitterness. Around 10 registers as barely bitter; above 60 lands firmly in sharply bitter IPA territory.
